A sign that lists the fillings, names the station, and tells people where the queue starts. A taco bar is the most common self-serve food station at a wedding now, usually late at night or at the rehearsal dinner, and it is the one where guests most need to know what is in each dish.
List the proteins, the salsas and the heat level. Mark what is vegetarian and what is not. That last part saves your caterer being asked forty times and saves a guest guessing wrong.

What should the sign say?

How many signs do I need?
One large sign for the station and small labels for each dish. Six to eight small labels is typical, and they do more work than the big sign because they answer the question at the point where it is asked.
Which material near food?
Acrylic. Salsa gets on everything, and acrylic is the only one of the three that wipes clean and comes back looking new. Paper by a food table lasts about an hour.
Which size?
8x10 or a paper print at 18x24 for the main sign, 5x7 or a 4x6 pedestal for the dish labels. Ordering one large and a set of small ones is the setup that works at a buffet.
Should I mark allergens?
Yes, and it is worth the extra line. Gluten free, dairy free and vegetarian are the three most useful. It does not replace telling your caterer, but it answers the question before a guest has to ask.
When should I order?
Two to three weeks. Menus change late, so leave room for the wording to move on the proof, which costs nothing.
